Spicy Roast Beast

Having found a recipe from the Food Network for pork shoulder roasts, but as usual, not having quite all the ingredients, I decided to adapt it just a little. After cooking all night in the crock pot, the result is absolutely incredible. Here’s what I did:

4 cloves garlic, peeled and chopped into fourths
1/2 onion, peeled and chopped into eighths
3 jalapeno’s, seeded and chopped
1 lime, zest and juice
1-2 Tbsp Four Thieves Vinegar (any vinegar will do, but I usually opt for apple cider or red wine vinegar)
2 tsp coriander seeds
2 tsp cumin seeds
2 tsp cinnamon
Kosher salt & ground pepper
~2 1/2 lbs pork shoulder roast, cut into large cubes

Place garlic, onions, jalapeno, lime zest and juice, and vinegar into (cold) crockpot. Using a mortar & pestle, grind spices and rub onto meat. Place meat into crockpot and cover. Cook on LOW for 8-12 hours. I think I may serve this with rice.
